Vegan Ceasar Salad

 

Ingredients:

  • 1⁄2 Head Romaine Lettuce

  • 1⁄2 Head Kale of Choice

  • 1 Cup Cooked Chickpeas

  • 1⁄2 Cup Hemp Seeds

  • 1 Avocado

  • 1⁄2 Cup Mung Sprouts

  • 1 Tbls Paprika

  • 1 Tsp Liquid Smoke

  • 1⁄2 Lemon (juiced)

Method:
Pre heat your oven to 180 degrees Celsius.

Place the chickpeas in a small roasting pan and pour on the lemon

juice.

Sprinkle over the paprika and liquid smoke and toss to combine.

Place in the oven for 5-10 mins. Remember to set a time as it is VERY

easy to burn the chickpeas as I often do.

Remove from the oven once crisp and set aside.

Chop lettuce and kale into small chunks and add to a large mixing

bowl.

Chop the avocado and add to bowl.

Add the hemp seeds, sprouts and cooled chickpeas.

Toss well to combine all ingredients.

Top with my vegan Caesar dressing and lemon wedges.
